The best ever Strawberry Arugula Salad Ingredients

THIS IS DELICIOUS! Seriously. Too good and simple to not enjoy on a nice spring day! Strawberries are in season right now in North Carolina.  Go to your local farmer’s market stand or farm and pick your own.

 🍓 Strawberry Arugula Salad Ingredients:

5 oz arugula
1 cup strawberries, hulled and sliced
2 Tbsp cilantro, chopped
1/2 cup feta, crumbled
1 avocado, cubed
1/2 cup pecans, or other nut of choice, chopped

Make your own Dressing:
1-2 Tbsp almond oil, or oil of choice
1/4 tsp black pepper
juice of 1 lemon (optional)

Directions:

 

  1. In a large salad bowl, toss arugula, strawberries, cilantro, feta, avocado, and pecans.
  2. To make your own dressing, in a small mixing bowl, whisk together oil, pepper, and lemon juice. (Balsamic vinaigrette is a terrific addition instead of making your own.)
  3. Slowly pour dressing over the salad mixture, toss, and enjoy.
