Zucchini (Greek Salad): It’s What’s for Dinner!

We know that sometimes it can be hard to get in the recommended daily amount of vegetables. This is a very easy salad that gives a fresh and delicious take on getting in your vegetables and also makes your table festive.  This summer squash  is not only low in calories it is a good source of Dietary Fiber, Protein, Vitamin A, Vitamin C, Vitamin B6, Folate, Iron, Magnesium, Phosphorus, Potassium, Zinc, Copper and Manganese. To cut your zucchini in spirals, a Veggetti Spiral Slicer is great and only about $10.

Ingredients:

  • Zucchini, spiraled
  • Black olives, whole or chopped
  • Baby tomatoes
  • Cucumber, slices
  • Feta crumbles
  • Greek Salad Dressing

Directions:

  1. Slice washed zucchini into spirals.
  2. Add olives, tomatoes, cucumbers, and feta to taste.
  3. Drizzle with dressing and serve!
